Sopa de calabaza con manzana - Pumpkin and apple soup


Nov/13/2012 – En mi primer intento por hacer sopa de calabaza, me encontré con muchas versiones. Tomé información de aquí y de allá para armar mis propias versiones. Hice dos pruebas, una con butternut squash (prueba 1), y otra con jengibre, ajo, y canela (prueba 2). Ambas quedaron muy buenas. La de jengibre quedó un poco más picosita que la otra, que tiene un sabor más dulce y cremoso que le da la butternut squash.
En las recetas que vi que llevaban jugo de manzana, para cantidades similares, llevan 1 taza de jugo de manzana. También llevan caldo de pollo, pero yo usé sólo agua. También llevan una o dos tazas más de líquido. Algunas de las recetas también llevan crema, pero yo no la usé.

Prueba 1  - Calabaza, manzana, butternut squash

2 tazas de calabaza (media calabaza pequeña)
1 taza de butternut squash
1 taza de manzanas (1 manzana mediana)
2 tazas de agua
¼ taza de puré de manzana
¼ taza de azúcar morena
Cebolla picada
1 cucharadita de mantequilla
Sal, pimienta, y nuez moscada

Pelar y cortar en cubos la calabaza y la butternut squash. Cortar la manzana en cubos (yo le dejé la cáscara). En una olla, calentar la mantequilla y agregar la cebolla picada. Luego, agregar la calabaza, manzanas, y butternut squash. Agregar los líquidos (agua y jugo de manzana). Sazonar con sal, pimienta, y nuez moscada. Revolver. Agregar el puré de manzana y el azúcar. Tapar y bajar el fuego cuando empiece a hervir. Dejar cocer por 10 mins aprox, hasta que las verduras estén bien tiernitas. Vaciar el contenido de la olla a la licuadora, licuar, y regresar a la olla para otro hervor. Probar y ajustar de sazón si es necesario. Servir y disfrutar!

Prueba 2  - Calabaza, manzana, y jengibre

2 tazas de calabaza (media calabaza pequeña)
1 taza de manzanas (1 manzana mediana)
2 tazas de agua
¼ taza de puré de manzana
¼ taza de jugo de manzana
¼ taza de azúcar morena

Aceite de olivo
Un poquito de Jengibre y ajo picados
Sal, pimiento, nuez moscada, y canela

Pumpkin and apple soup

Nov/13/2012 - I found that there are many ways to make a pumpkin soup. After reviewing some recopies on line, I came up with two “tests” of creating my own. There are a few changes I made. The recipes that called for apple cider, for similar amounts of pumpkin, they listed 1 cup of apple cider, I used ¼ cup because that was what I had left of the Golden Harvest Farms apple cider. I don’t use chicken broth on my soups and these ones are not the exception. I used water instead (save the ridiculous amount of sodium commercial broths have). Most of the recipes called for more liquid, but I used less. Some recipes called for cream or half and half, but I didn’t add any of it.

Test 1  - Pumpkin, apple, and butternut squash

2 cups pumpkin peeled and cut in cubes
1 cup butternut squash
1 cup apple cut in cubes, leave the skin for extra fiber
2 cups water
¼ cup apple cider
¼ cup apple sauce (my homemade applesauce is unsweetened)
¼ cup brown sugar
½ of a small onion (or less, I didn’t use much), chopped
1 tablespoon butter or olive oil
Salt, pepper, nutmeg, and cinnamon

Heat the butter or oil in a pot. Add the onion and cook for a few minutes. Add the pumpkin and cook for a couple of minutes. Add the apple, the butternut squash, and then the rest of the ingredients: water, apple cider, apple sauce, sugar, salt, pepper, cinnamon, and nutmeg. Stir. Bring it to boil. When it started to broil, reduce the heat, cover the pot, and cook for about 15 minutes, until all the vegetables are very tender. Pour the mix from the pot into the blender and blend until smooth. You can blend in the blender 3/4 s of the soup, and use the mash potatoes tool to mash the other part. You can also use a hand blender. Bring the mix for the last broil, serve, and enjoy!

Bienvenido a mi blog. En este espacio compartiré algunas de las recetas que me gusta preparar. Me gusta experimentar cosas nuevas y diferentes, e integrar frutas y verduras locales de temporada. Usualmente utilizo lo que tengo y siempre termino adaptando o inventando recetas. Mi invitación es que te des una idea con lo que yo te doy, y tu lo prepares como quieras y con lo que tengas.
Soy una persona activa y deportista, y busco la forma de mantener un estilo de vida saludable. Eso incluye mi alimentación. Busco que la mayoría de las recetas sean saludables, pero no me limito. También estoy haciendo los Lunes sin Carne, por lo que he buscado la forma de incluir opciones vegetarianas.
Como experimento voy a ver la forma de poner las recetas en inglés y en español, ya que tengo amigos que sólo hablan uno u otro idioma.
Espero que estas ideas te motiven a incursionar en la cocina y tal vez te ayude a elegir opciones saludables.

I consider myself an athlete, and I am interested on a healthy living and a healthy eating. Most of my recipes are as healthy as I can, without limiting myself. I’m also doing the Meatless Mondays, so expect vegetarian options.
Also, I will try to post all the recipes in English and Spanish, because I have friends that speak only one of those languages.
