“Hummus” con verduras y nueces – “Hummus” with veggies and nuts

            Le puse “hummus”, con comillas, porque es similar pero no es hummus. Aquí hay una receta para hacer el hummus, el cual lleva garbanzos y tahini. La idea de moler los garbanzos con verduras cocidas (zanahoria, originalmente) es de Fácil de Digerir, yo le agregué las nueces y otras verduras (kohlrabi y nabo blanco). A este “hummus”, además de garbanzos y verduras cocidas, le agregué nueces y cacahuates. Lo probé para ver si le agregaba sal, pero la verdad es que me gustó así como salió. La combinación de nueces con garbanzos (leguminosas) cumple con los requerimientos de combinación de proteínas vegetales para complementar su valor proteínico (más sobre las Proteínas Vegetales aquí). No esperes el sabor del “hummus”, ya que no está sazonado, no lleva ajo, ni comino, ni limón, ni sal. Puedes aventurarte y separar un poco y experimentar poniéndole algunas cosas y ajustar al sabor que te guste.
Puede usarse como hummus, para botanear con galletitas integrales saladas, o para untarlo en pan y hacer sándwiches agregándole verduras salteadas, pepino, aguacate, tofu, hojas verdes, todo junto, unos u otros, o lo que te guste, se te antoje y tengas a la mano.
Para guardarlo, yo puse la mezcla en tres topercitos pequeños, y puse dos en el congelador, y uno en el refri.

            I named this “hummus”, with quotation marks, because is similar to the real hummus. Here is a recipe of a real hummus, which is garbanzos, tahini, and some seasonings. I got the idea of mixing garbanzos with steamed carrots from this website, Fácil de digerir, in Spanish. I was making that recipe originally, and then it occurred to me to experiment and add nuts (walnuts and peanuts), as well as use other veggies that I had, such as kohlrabi and parsnip. The combination of nuts and garbanzos meets the requirements to complete vegetable proteins (more about Complete Vegetable Proteins here). When you make this recipe, do not expect the real hummus flavor, because it doesn't have any seasoning. You can experiment if you want and take some of this mix and add seasonings (garlic, curry, cumin, salt, etc), and find your own mix.
You can use this mix as hummus, to have with pita bread, whole wheat crackers, or spread it in bread and make sandwiches adding some sauté veggies, avocado, tofu, cucumber, some greens, all together, some of those ingredients, anything you like, want, and have at hand in the fridge.
To storage it, I put the mix in three small plastic containers, and put two in the freezer, and one in the fridge.

1 cup of steamed root veggies (carrots, parsnip, kohlrabi)

½ cup of walnuts (or pecans)

Procedimiento:
Mezclar todos los ingredientes en el procesador de alimentos.

Procedure:
Mix all the ingredients in the food processor.

Nota, Jan/17/2013 - Untar "hummus" en una rebanada de pan (es mejor si es integral) y calentarlo en el hornito tostador. Luego, agregar unas rebanaditas de aguacate, y agregar un poco de aceite de olivo, sal, y muy poquito comino. Quedó muy rico.

Note, Jan/17/2013 - Spread "hummus" in a slice of bread (whole grain is better) and warm it up in the toaster oven. Then, add some slices of avocado, dress with some olive oil, salt, and a dash of cumin. Very good!




Nota, Feb/15/2013 - Hoy comí un pan con el "hummus", pero en lugar de usar aguacate, usé unas verduras sateadas. Hice lo mismo: Untar "hummus" en una rebanada de pan integral y calentarlo en el hornito tostador. Mientras, salteé unas verduras que tenía en el refri. Cuando el pan ya estaba calientito, lo saqué del hornito, le puse tantito aceite de oliva encima, sal, y un poquito de comino. Luego le puse las verduras salteadas encima.

Meanwhile, chop some veggies (in the picture, you can see that I used root veggies this time) and saute them. Take the bread out of the oven, add some olive oil, salt, a dash of cumin, and top it with some of the veggies.

Caldo de pollo con arroz – Chicken soup with rice


        Qué rico un caldito de pollo en un día frío, o cuando se está enfermo, o en cualquier momento. Lleno de vitaminas, y al hacerlo en casa se tiene control sobre la sal, la grasa, y la calidad de los ingredientes. Creo que no necesita más introducción. Además, el pollo se puede utilizar para hacer flautas, enchiladas, enmoladas, enchiladas verdes, etc. Aquí muestro cómo lo hago yo.
Nota: aunque queda muy rico también si se le agregan huesos al caldo, yo uso pechuga deshuesada y lo disfruto igual. Además, la pechuga es la parte con menos grasa, la cual no considero que sea necesaria. Pero tu hazlo como tu quieras.

        A good homemade chicken soup is always delicious and better in a chilly day, or when someone is sick. Is a dish packed with vitamins, and because is homemade, you have the control over the quality of the ingredients, the fat, and the amount of salt. Plus, the chicken once cooked can be used on flautas, enchiladas de mole, enchiladas verdes, etc. Here is how I make it. You make your adjustments.
Note: Use the chicken with the bones is the most common way to make it, and give it a good flavor. I use boneless breast and I enjoy it too. I use the breast because is the part of the chicken with less fat, which I think is not necessary.

2 or 3 mitades de pechugas de pollo sin hueso y sin piel
2 or 3 boneless chicken breasts, without the skin
Media cebolla mediana, pedazo
Half medium onion, a piece
1 diente de ajo
1 clove of garlic
1 jitomate, partido por mitad
1 tomato, cut in half
¼ de una col
¼ of a cabbage, a piece
2 zanahorias peladas y cortadas pedazos medianos
2 carrots, peeled and cut in cubes
1 papa mediana (son pelar), en cubos
1 medium potato (leave the skin on), cut in cubes
2 varas de apio, cortada en pedazos pequeños
2 sticks of celery (or celeriac), cut in cubes
*1 chayote mediano, cortado en cubos
*1 medium chayote, cut in cubes
*1 elote desgranado o el elote complete partido por mitad
*1 corn, kernels or the whole cob cut in half
½ tazas de arroz integral, lavado
½ cup of brown rice, washed
Hierbas de olor: 1 clavo, 2 hojas de laurel, sal, pimienta, orégano seco, *tomillo, *mejorana.
Herbs: 1 clove, 2 bay leafs, salt, pepper, dried oregano, *thyme, *mejorana
Agua suficiente como para tapar todo, 4 litros aprox
Water, enough to cover all the ingredients, about 8 cups
1 cucharada de cebolla picada
1 tablespoon of onion, chopped
1 cucharadita de chile serrano o jalapeño picado
1 teaspoon of chile serrano or jalapeño, chopped
Una mitad de limón
The juice of ½ lime

Procedimiento:

1.   Poner a hervir el agua en una olla honda. Antes de que hierva, agregar el pollo lavado, el ajo, el pedazo de cebolla, el jitomate partido por mitad, el pedazo de col lavada y desinfectada, y las hierbas de olor que se desean agregar. Tapar y cocer a fuego medio.
2.   Lavar el arroz y agregarlo a la olla. Cocer tapado a fuego medio por aproximadamente 20 mins.
3.   Mientras se cuecen el pollo y el arroz, lavar y picar las verduras que se desean agregar al caldo: papa, zanahoria, apio, chayote, elote. La cáscara de la papa puede removerse si se desea, o dejarla para aprovechar la fibra. El elote puede desgranarse y usar sólo los granos, o cortar el elote en dos o 3 partes, dependiendo del tamaño del elote, y agregarlo completo al caldo.
4.   Cuando el pollo y el arroz se hayan cocido, agregar las verduras. Seguir cociendo hasta que las verduras se hayan cocido, 10 mins aprox.
5.   Servir con limón, cebolla picada, chile serrano o jalapeño picados, y acompañar con un taco de guacamole.

Procedure:

1.   Boil the water in a stockpot. Before it boils, add the washed chicken, along with the garlic, the peace of onion, the peace of cabbage, the tomato in cut in half, salt, pepper, and the herbs: the clove, bay leafs, oregano, mejorana, thyme. Cover the pot and cook for about 20 minutes at medium heat.
2.   Wash and add the brown rice to the pot.
3.   Meanwhile, wash, peel, and cut the vegetables that you wish to add to the soup: potato, carrot, celery (or celeriac), chayote, corn. You can peel the potato if you want to, or leave the skin for the fiber. You can make the combination of veggies that you want, you can use celeriac too. Chayote is not that easy to find in the grocery store in the U. S. if you find it and wish to experiment with it, peel it as you do with the carrots, and cut it in cubes, just make sure you wash your hands thoroughly after peel it. For the corn, you can use only the kernels, or cut the corn in the cob in two or three parts and put it in the pot.
4.   Check that the chicken and the rice are cooked. When they are cooked, add the veggies. Continue to cook covered for about 10 more minutes at medium heat, or until all the veggies are cooked.
5.   Serve with chopped onion, chile serrano or jalapeño chopped, and lemon juice. Test it or salt and add if needed.

Tofu con jengibre – Ginger tofu

        Una forma fácil y práctica de preparar el tofu es con jengibre. El tofu es como una esponja que no tiene sabor, toma el sabor de lo que se le ponga. Esta forma de prepararlo me ha gustado porque hago todo el paquete, uso lo que necesito, y el resto lo pongo en una ziplok o en un tupper y lo congelo. También, lo uso casi con todo: en sándwich, tacos, o con verduras salteadas, por ejemplo.

        This is an easy way that I have found to cook the tofu. Tofu is like a sponge that doesn’t have flavor on its own, it takes the flavor you cook it with, and I loved it with ginger. One of the benefits I have found in cooking it this way, is that I can do the whole package, use what I need, and then put it in a ziplok bag or a Tupperware and freeze it. I have used it in sandwiches, tacos, or with sauté vegetables, for example.

1 paquete de tofu orgánico extra firme
1 package organic tofu extra firm
2 cucharadas de miel
2 tablespoons honey
2 cucharadas de salsa de soya (puede ser reducida en sodio)
2 tablespoons soy sauce (low sodium if you want)
4 cucharadas de agua
4 tablespoons water
1 cucharadita de jengibre picado
1 teaspoon chopped ginger
1 diente de ajo picado
1 clove of garlic chopped
El jugo de media naranja
The juice of half orange
Aceite de ajonjolí
Sesame oil

Procedimiento:

1.   El tofu en paquete viene con suero, primero hay que escurrirle todo el suero y secarlo lo más que se pueda. Para esto, se puede poner entre servilletas de papel y luego ponerle algo pesado encima, como un plato de cerámica, para que la servilleta absorba el suero del cubo de tofu. Cambiar las servilletas un par de veces. Si el tofu es extra firme, puede dejarse media hora, cambiando las servilletas. Si se quiere hacer este paso con mucha anticipación, puede dejarse por varias horas en el refri. La idea es que al cortarlo no se desquebraje.

2.   Mientras las servilletas están absorbiendo el exceso de agua del tofu, se mezclan el resto de los ingredientes en un tazón para hacer la salsa: miel, salsa de soya, agua, jengibre, y ajo.

3.   Una vez  que se retiró el exceso de agua del tofu, se corta en láminas gruesecitas.

4.   En un refractario, se deja marinar las láminas de tofu en la salsa. Si se puede dejar marinar por espacio de media hora, mejor, pero si no, con 15 minutos está bien.

5.   En un sartén, calentar aceite de ajonjolí a fuego medio. Acomodar las láminas en el sartén para cocerlo a fuego medio por unos minutos, voltearlas, y cocinar por el otro lado hasta que esté un poco doradito. Agregar el resto de la salsa y apagar el fuego.

Procedure:

1.   Tofu usually comes in a package with water, a kind of whey. Before using it, you need to drain the water. Take it out of the package, and put the block into paper towels to absorb the liquid for about 30 minutes. It the tofu is extra firm, with 15 minutes should be fine. You can put something heavy on top to press it against the paper towels. Change the napkins a couple of times. If you do this step ahead of time, you can put it in the fridge wrapped in the paper towels. The idea is that when you cut the tofu into slices, it doesn't fall apart.

2.   While the paper towels are absorbing the water, prepare the salsa to marinate it in. Mix in a bowl the remaining ingredients: honey, soy sauce, water, orange juice, garlic, and ginger.

3.   When the paper towels absorbed some water, cut it into slices (not that thin).

4.   Place the slices in a large container and cover them with the sauce. Let them marinate for about 30 minutes (15 mins should be fine).

5.   Heat the sesame oil in a pan over medium heat. Cook the slices of tofu for a few mins, flip them, cook for other minutes, until brown. Poor the rest of the salsa on top and turn the heat off.

        Seguimos en temporada otoñal de calabazas y sus derivados. Todavía hay calabazas y butternut squash (que es un tipo de calabaza) en el mercado… y en mi refri… camote (sweet potato, para los norteamericanos) hay casi todo el año. Así que para usar lo que me queda, seguiré el consejo de una compañera de trabajo y lo haré al horno. Como es dulce, yo lo considero postre o snack dulce de media tarde (para acompañar mi café), pero para otros puede ser una guarnición. En gustos se rompen géneros.

        As we continue to enjoy the fall harvest, and because I still have some pumpkin and butternut squash, I decided follow a coworker’s advice and roast them together, along with sweet potatoes. Since this dish is sweet, I consider it a dessert or a mid afternoon snack (with my coffee), but others can consider it a side dish.

2 tazas de calabaza cortada en cubos
2 cups pumpkin cut in cubes
2 tazas de butternut squash pelada y cortada en cubos
2 cups butternut squash peeled and cut in cubes
2 tazas de camote cortado en cubos (yo le dejo la cáscara)
2 cups sweet potato cut in cubes (I leave the skin)
2 cucharadas de mantequilla
2 tablespoons butter
½ taza de azúcar morena
½ cup brown sugar
Canela y nuez moscada al gusto
Cinnamon and nutmeg to taste
1 cucharadita de ralladura de naranja (opcional)
1 teaspoon orange zest (optional)


Procedimiento:

1.   Precalentar el horno a 400°F.
2.   En un refractario o molde que se pueda meter al horno, echar la calabaza, la butternut squash, y el camote. Espolvorear encima el azúcar, la canela, la nuez moscada, agregar la mantequilla (no se necesita derretir antes), y la ralladura de naranja.
3.   Tapar el refractario con papel aluminio y hornear por 25 minutos aproximadamente, o hasta que las calabazas estén suavecitas.

1.   Preheat the oven at 400F.
2.   In a baking dish, combine all the ingredients: pumpkin, butternut squash, and sweet potato. Sprinkle the sugar, cinnamon, nutmeg, orange zest, and add the butter on top.
3.   Cover the baking dish with tin foil and bake it for about 20 minutes, or until tender.
