Calabazas dulces horneadas – Roasted pumpkins


        Seguimos en temporada otoñal de calabazas y sus derivados. Todavía hay calabazas y butternut squash (que es un tipo de calabaza) en el mercado… y en mi refri… camote (sweet potato, para los norteamericanos) hay casi todo el año. Así que para usar lo que me queda, seguiré el consejo de una compañera de trabajo y lo haré al horno. Como es dulce, yo lo considero postre o snack dulce de media tarde (para acompañar mi café), pero para otros puede ser una guarnición. En gustos se rompen géneros.

        As we continue to enjoy the fall harvest, and because I still have some pumpkin and butternut squash, I decided follow a coworker’s advice and roast them together, along with sweet potatoes. Since this dish is sweet, I consider it a dessert or a mid afternoon snack (with my coffee), but others can consider it a side dish.

2 tazas de calabaza cortada en cubos
2 cups pumpkin cut in cubes
2 tazas de butternut squash pelada y cortada en cubos
2 cups butternut squash peeled and cut in cubes
2 tazas de camote cortado en cubos (yo le dejo la cáscara)
2 cups sweet potato cut in cubes (I leave the skin)
2 cucharadas de mantequilla
2 tablespoons butter
½ taza de azúcar morena
½ cup brown sugar
Canela y nuez moscada al gusto
Cinnamon and nutmeg to taste
1 cucharadita de ralladura de naranja (opcional)
1 teaspoon orange zest (optional)


Procedimiento:

1.   Precalentar el horno a 400°F.
2.   En un refractario o molde que se pueda meter al horno, echar la calabaza, la butternut squash, y el camote. Espolvorear encima el azúcar, la canela, la nuez moscada, agregar la mantequilla (no se necesita derretir antes), y la ralladura de naranja.
3.   Tapar el refractario con papel aluminio y hornear por 25 minutos aproximadamente, o hasta que las calabazas estén suavecitas.

1.   Preheat the oven at 400F.
2.   In a baking dish, combine all the ingredients: pumpkin, butternut squash, and sweet potato. Sprinkle the sugar, cinnamon, nutmeg, orange zest, and add the butter on top.
3.   Cover the baking dish with tin foil and bake it for about 20 minutes, or until tender.

        Hace como un mes comí una ensalada de butternut squash en un restaurant, y desde entonces había querido hacer mi propia versión. Vi varias recetas, y aquí les paso cómo me quedó a mí, usando los ingredientes que tenía a la mano. A mí me gustó cómo quedó, espero que a ustedes también les quede rica!

        I had a similar salad in a local restaurant about a month ago, and I wanted to come up with something similar. I found a couple of recipes and came up with my own, using what I have at hand at the moment. It turned out to be a very good salad! I enjoyed it so much, I hope you do too.

Ingredientes

1 Butternut squash pequeña
1 small butternut squash
Lechuga
Lettuce
Nueces picadas y arándanos secos, cantidad al gusto
Chopped walnuts and dried cranberries, amount to taste
Queso de cabra, cantidad al gusto (hoy yo tenía uno con arándanos)
Goat cheese, amount to taste (today I had one with cranberries, from Trader Joes)
Vinagreta
Vinaigrette
2 cucharadas de vinagre balsámico
2 tablespoons balsamic vinegar
4 cucharadas de aceite de oliva
4 tablespoons extra virgin olive oil
1 cucharada de jugo de naranja (opcional)
1 tablespoon fresh orange juice (optional)
Sal y pimienta al gusto
Salt and pepper to taste
Una pizca de azúcar morena
A dash of brown sugar


Procedimiento:

1.   Precalentar el horno a 400F.
2.   Pelar y cortar en cubos la butternut squash. Ponerla en un refractario y ponerle aceite de olivo, sal y pimienta. Mezclar bien. Hornear por 15 o 20 minutos aproximadamente, o hasta que esté tiernita.
3.   Sacar la butternut squash del y dejar que se enfríe.
4.   Hacer la vinagreta: mezclar todos los ingredientes en un recipiente. El resto se puede guardar en el refri. *Otra opción es mezclar el queso de cabra en este paso, y batir hasta obtener un adereso cremoso.
5.   Servir la ensalada: lechuga, pedacitos de butternut squash, nueces, arándanos secos, queso de cabra, y vinagreta.

Procedure:

2.   Peel and cut into cubes the butternut squash. Put it in a roasting tin and toss it with olive oil, salt, and pepper. Roast for 15 – 20 minutes, or until tender.
3.   When tender, take it out of the oven and let it cool.
4.   Make the dressing: mix all the ingredients in a bowl. Leftovers can be storage in the fridge, ready for another salad. *Another option is to make a creamy dressing by mixing the goat cheese with the dressing ingredients.
5.   Serve the salad: lettuce, roasted butternut squash, walnuts, cranberries, goat cheese, and the dressing.

A esta sopa se le puede agregar o cambiar las hojas verdes, pueden ser acelgas, o espinacas, pueden agregarse champiñones también. La combinación de la quinoa (cereal) y los garbanzos (legumbre) permite que las proteínas vegetales de cada grupo se complementen. Puedes hacer una buena cantidad y ponerla en toppers y congelarla. Así tienes sopa para después.

            You can use any kind of greens you have at hand, and mushrooms. Use the combination you want. Also, the combination of the garbanzos (pulse/legume), and the quinoa (grains) allows the vegetal proteins of each group to complement. Simply-vegetarian.com has more information about the combination of the vegetal proteins.
You can make a big amount of soup once, and then freeze it in individual portions for latter.

5 jitomates medianos
1 diente de ajo
1 pedazo de cebolla
¾ de taza de garbanzos cocidos
½ taza de quinoa cocida
Vegetales verdes que se tengan a la mano: acelgas, espinacas
Champiñones (opcional)
Un chorrito de aceite de canola
4 tazas de agua
Sal

5 medium tomatos
1clove of garlic
1 peace of onion (about ¼ of a medium onion)
¾ cup of cooked garbanzos
1/3 cup of cooked quinoa
Collard greens, or swiss greens, or spinach, or a combination of any of those.
Mushrooms (optional)
1 tablespoon of canola oil
4 cups water
Salt

Procedimiento:

En una olla, calentar el aceite. Mientras, mezclar en la licuadora los jitomates partidos por mitad, el ajo, el pedazo de cebolla, 4 tazas de agua, y sal. Licuar. Vaciar el contenido de la licuadora en el aceite caliente. Dejar que hierva (este es el principio básico de casi todas las sopas que preparo). Agregar el resto de los ingredientes: los garbanzos, la quinoa, y los vegetales. Se puede agregar un poco de más agua, dependiendo de si se quiere más “calduda” la sopa. Cocer por aprox 5 minutos más. Servir.

Procedure:

Heat the oil in a pot. Meanwhile, mix in the blender the tomatoes cut in halves, the garlic, the peace of onion, the water, and the salt. Pour the mix from the blender in the pot. Let it cook/boil for about 5 or 7 minutes to medium heat (this is the basic part of most of the soups I cook). Add the rest of the ingredients: garbanzos, quinoa, and collard greens. Let it cook for another 5 mins aprox. You can add more water depending on the consistency you want for your soup.

            Esta salsa ha resultado ser muy versátil, especialmente porque no es la salsa que tengo regularmente en casa. La he usado sobre los huevos revueltos/omelet en el desayuno, o sobre pollo asado, sobre el arroz verde que no me quedó tan bien, incluso con una carne asada que no me había gustado el sabor de la carne.

            This salsa is not the salsa that I have all the time at home, but it turned out to be very versatile. I have used it on my scramble eggs/omelet on breakfast, or over a grilled chicken, over the rice, or even with a grilled meat that I didn’t like the “meat” flavor. I think it is a salsa that you can use over everything.

5 tomates (o tomatillos)
2 o 3 chiles mulatos
1 diente de ajo

5 tomatillos
2 or 3 chiles mulatos (you can find them at the Mexican store)
1 clove of garlic

Procedimiento:

Lavar los chiles y los tomates. Hervir agua en una olla chica (que tape bien los tomates). Cuando el agua esté hirviendo, echar los tomates, los chiles lavados, y el diente de ajo por unos 3 minutos. Que no se cosan de más porque se hacen agrios, que no se rompa la piel, sólo hasta que cambien de color. Saca todo y echarlo a la licuadora. Los chiles se desvena antes de echarlos a la licuadora. Agregar sal al gusto y un poco del agua en donde se hirvieron los ingredientes, y licuarlos. Probar de sal.

Procedure:

Wash the chiles and the tomatillos. Boil water in a small pot, use enough water to cover the ingredients. When the water is boiling, put the tomatillos, the chiles, and the garlic in it. Cook to only for about 3 minutes, or until the tomatillos change their color. Don’t let them overcook (when the skin breaks). Take the ingredients out of the water and put it into the blender. Open the chiles and take all the seeds and the veins off before put them in the blender. Add some salt to taste and some water to the blender and blend. And it is ready to go.

            Me encontré con una de muffins de diferentes tipos, probé con los de salvado y quedaron riquísimos. Para no perder la costumbre, hice algunos cambios a la receta original.
Creo que son un snack muy saludable. También pueden ser parte de un buen desayuno: un muffin integral, una fruta, y una taza de leche o café. Creo que son el sustituto perfecto para los malísimos cereales de caja. Además, son más prácticos, porque ya están hechos y te lo puedes comer en el camino. Son bajos en azúcar y grasas, y están hechos prácticamente con carbohidratos complejos (harina integral, salvado de trigo, y germen de trigo).

I found a recipe that included different ways to make them. I tried the ones with wheat bran and they were delicious. As usual, I made some changes to the original recipe (in Spanish).
            I think that these muffins are the best snack, the best breakfast in substitution to the box cereals, which are just a bomb of refined flours, sugars, and are not a healthy option at all. These muffins are low in fat and sugars, and are made with complex carbohydrates (unbleached whole wheat flower, wheat bran, and wheat germ. You can make a big batch and put some in a ziplok plastic bag and put them in the freezer, and then you just take them when you need them, let them defrost at room temperature for about 30 mins, or in the toaster oven while you are getting ready to go to work/school, and just put them in a plastic bag and take it with you. More convenient and healthy than a bowl of box cereal!

1 1/3 tazas (150 gramos) de harina integral (unbleached white whole wheat de King Arthur)
1 1/3 tazas (170 gramos) de salvado de trigo
1 puño de nueces (puedes poner 1 taza, si quieres)
1/4 taza (25 gramos) de germen de trigo tostado
1 1/2 cucharaditas de bicarbonato de sodio
1/3 taza (65 gramos) azúcar morena
1/2 cucharadita de polvo de hornear
1/2 cucharadita de sal
1/3 taza (85 gramos) de mantequilla sin sal derretida
1/3 taza (80 mL) de miel
1 taza (240 mL) de yogur natural (yo usé yogurt de búlgaros)
2 cucharaditas de esencia de vainilla
2 huevos
1 1/3 cup King Arthur’s unbleached white whole wheat
1 1/3 cup wheat bran
½ cup walnuts, or pecans
1/4 cup wheat germ
1 1/2 teaspoon baking soda
1/3 cup brown sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1/3 cup unsalted butter, or canola oil
1/3 cup honey
1 cup plain yogurt
2 teaspoon vanilla
2 eggs



Procedimiento:

Precalentar el horno a 400F. Engrasar el molde para muffins o ponerle los papelitos.
1 - Mezclar los ingredientes secos en un tazón. 
2 - En otro, mezclar todos los líquidos, hasta que queden bien mezclados. 
3 - Hacer un hueco en el centro de los sólidos y agregar lo líquido. Aquí si aplica hacerle caso a la receta: Mezcla con movimientos envolventes solamente hasta que no se vean zonas secas. No muevas demasiado o quedarán duros
4 - Llenar a ¾ los moldes de muffins inmediatamente. En este momento, antes de meterlos al horno, yo le puse unas cuantas blueberries (arándanos frescos) a cada uno. 
Meter rápido al horno. Hornear por 15-20 minutos a 400F. Haz la prueba del palillo cuando los veas doraditos. Si se pasan en el horno, van a quedar duros. En cuanto el palillo salga seco, hay que sacarlos y dejarlos enfriar. Los panecitos duran en una bolsa de plástico unos días, o los puedes meter en una ziploc y congelarlos. Para descongelarlos, sólo hay que dejarlo un ratito a temperatura ambiente. Yo lo meto en al hornito tostador unos minutos. Yo hice la mitad de la receta y me salieron 10 panecitos medianos.


Procedure:

Preheat the oven at 400F, and prepare the muffin tin (grease them with spry oil or place muffins cup paper). 
1 - In a bowl, combine all the dry ingredients.
2 - In a separate bowl, combine well all the liquid ingredients.
3 - Now, this is important: add the liquid ingredients into the dry ones, but do not mix too much, or they won’t be soft.
4 - Fill the tins 3/4s full. You can add some blueberries here to each cup if you want.
Right away, place them in the oven and bake for 15 to 20 minutes, or until the toothpick comes out dry. If you let them over cook, they won’t be soft. Let them cool down and enjoy!

Nov/13/2012 – En mi primer intento por hacer sopa de calabaza, me encontré con muchas versiones. Tomé información de aquí y de allá para armar mis propias versiones. Hice dos pruebas, una con butternut squash (prueba 1), y otra con jengibre, ajo, y canela (prueba 2). Ambas quedaron muy buenas. La de jengibre quedó un poco más picosita que la otra, que tiene un sabor más dulce y cremoso que le da la butternut squash.
En las recetas que vi que llevaban jugo de manzana, para cantidades similares, llevan 1 taza de jugo de manzana. También llevan caldo de pollo, pero yo usé sólo agua. También llevan una o dos tazas más de líquido. Algunas de las recetas también llevan crema, pero yo no la usé.

Prueba 1  - Calabaza, manzana, butternut squash

2 tazas de calabaza (media calabaza pequeña)
1 taza de butternut squash
1 taza de manzanas (1 manzana mediana)
2 tazas de agua
¼ taza de puré de manzana
¼ taza de azúcar morena
Cebolla picada
1 cucharadita de mantequilla
Sal, pimienta, y nuez moscada

Pelar y cortar en cubos la calabaza y la butternut squash. Cortar la manzana en cubos (yo le dejé la cáscara). En una olla, calentar la mantequilla y agregar la cebolla picada. Luego, agregar la calabaza, manzanas, y butternut squash. Agregar los líquidos (agua y jugo de manzana). Sazonar con sal, pimienta, y nuez moscada. Revolver. Agregar el puré de manzana y el azúcar. Tapar y bajar el fuego cuando empiece a hervir. Dejar cocer por 10 mins aprox, hasta que las verduras estén bien tiernitas. Vaciar el contenido de la olla a la licuadora, licuar, y regresar a la olla para otro hervor. Probar y ajustar de sazón si es necesario. Servir y disfrutar!

Prueba 2  - Calabaza, manzana, y jengibre

2 tazas de calabaza (media calabaza pequeña)
1 taza de manzanas (1 manzana mediana)
2 tazas de agua
¼ taza de puré de manzana
¼ taza de jugo de manzana
¼ taza de azúcar morena
Cebolla
Aceite de olivo
Un poquito de Jengibre y ajo picados
Sal, pimiento, nuez moscada, y canela

Pelar y cortar la calabaza en cubos. Cortar la manzana en cubos (yo le dejé la cáscara). En una olla, calentar el aceite y agregar la cebolla picada y el ajo. Luego, agregar la calabaza y manzana. Agregar también el jengibre picado. Agregar los líquidos (agua y jugo de manzana). Sazonar con sal, pimienta, canela, y nuez moscada. Revolver. Agregar el puré de manzana y el azúcar. Tapar y bajar el fuego cuando empiece a hervir. Dejar cocer por 10 mins aprox, hasta que las verduras estén bien tiernitas. Vaciar el contenido de la olla a la licuadora, licuar, y regresar a la olla para otro hervor. Probar y ajustar de sazón si es necesario. Servir y disfrutar!

Pumpkin and apple soup

Nov/13/2012 - I found that there are many ways to make a pumpkin soup. After reviewing some recopies on line, I came up with two “tests” of creating my own. There are a few changes I made. The recipes that called for apple cider, for similar amounts of pumpkin, they listed 1 cup of apple cider, I used ¼ cup because that was what I had left of the Golden Harvest Farms apple cider. I don’t use chicken broth on my soups and these ones are not the exception. I used water instead (save the ridiculous amount of sodium commercial broths have). Most of the recipes called for more liquid, but I used less. Some recipes called for cream or half and half, but I didn’t add any of it.

Test 1  - Pumpkin, apple, and butternut squash

2 cups pumpkin peeled and cut in cubes
1 cup butternut squash
1 cup apple cut in cubes, leave the skin for extra fiber
2 cups water
¼ cup apple cider
¼ cup apple sauce (my homemade applesauce is unsweetened)
¼ cup brown sugar
½ of a small onion (or less, I didn’t use much), chopped
1 tablespoon butter or olive oil
Salt, pepper, nutmeg, and cinnamon

Heat the butter or oil in a pot. Add the onion and cook for a few minutes. Add the pumpkin and cook for a couple of minutes. Add the apple, the butternut squash, and then the rest of the ingredients: water, apple cider, apple sauce, sugar, salt, pepper, cinnamon, and nutmeg. Stir. Bring it to boil. When it started to broil, reduce the heat, cover the pot, and cook for about 15 minutes, until all the vegetables are very tender. Pour the mix from the pot into the blender and blend until smooth. You can blend in the blender 3/4 s of the soup, and use the mash potatoes tool to mash the other part. You can also use a hand blender. Bring the mix for the last broil, serve, and enjoy!
